About Eric

Hi! My name is Eric Castillo and I started Follow Eric in 2009 as a way to keep friends and family back home in New Mexico up to date when I moved away to Oklahoma for a few years.

The blog quickly evolved into a showcase of the things I enjoy most: local restaurants, coffee shops, food trucks, community events, and exploring new cities, which lead to a love for travel.

Most of my trips have been as a solo traveler on a budget, which means lots of street food, walking tours, and staying in hostels.

Over the years, I’ve had the honor to experience and share a number of memorable moments:

  • Cheering on the fools running with the bulls in Pamplona during the Fiestas de San Fermin
  • Celebrating Canada Day with poutine and fireworks in Vancouver
  • Joining the crowds in Mexico City to watch the president lead El Grito de Dolores for Día de la Independencia
  • Walking in the Trans March in San Francisco during the largest Pride celebration in the U.S.
  • Attending the world’s largest Pride celebration—World Pride—the year Madrid played host
  • Taking my sister on a nighttime helicopter ride over Las Vegas
  • Taking my brother on a helicopter ride over Paris and the Palace of Versailles
  • Taking part in a papal audience in St. Peter’s Square in the Vatican
And my most cherished experience to date:
  • Trekking 500 miles across northern Spain along the Camino de Santiago
